What you will need:
1 3/4 cups self-raising flour, sifted
1/2 cup plain flour, sifted
1 tsp ground cinnamon
2/3 cup brown sugar
125ml almond milk
1/2 cup vegetable oil
3 tablespoons of melted Nuttex, cooled (I’m going to use Nutella)
3 overripe medium bananas, mashed
1/4 cup rouhgly chopped walnuts

What to do:
Preheat the oven to 180°C and line a loaf tin with baking paper or spray with oil spray.
Place the flours, cinnamon, brown sugar in a large bowl. Stir until combined and make a well in the center of the mix.
In a large jug whisk the mashed bananas, oil, nuttex and almond milk together and add to the dry ingredients.
Mix until well conbined. You may need to add more almond milk at this stage.
Fold in the walnuts and pour the mixture into the lined loaf tin.
Bake in the oven for 45-60 minutes or until a skewer just comes out clean.
Serve with a sprinkle of cinnamon sugar.

This recipe serves about 12 and freezes well for about 2 weeks in an airtight container and wrapped in foil.
